- 1 pound lean ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium green bell pepper, chopped
- 1 can (14 oz) diced tomatoes with juices
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- Salt & pepper to taste
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Break apart as it cooks.
- Add the chopped onion, garlic, and bell pepper; sauté until softened (about 5 minutes).
- Stir in the chili powder, cumin, salt, and pepper to coat the meat and veggies evenly.
- Pour in the diced tomatoes (with juices), kidney beans, and black beans; mix well.
- Bring to a gentle boil. Reduce heat to low, cover the pot, and simmer for at least 30 minutes.
- Serve hot in bowls with optional toppings like shredded cheese or sour cream.
Notes
- This recipe can be adjusted for heat by adding more chili powder or jalapeños.
- Top with sour cream or avocado for extra creaminess.
