Description

Ingredients

  • 1 pound lean ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium green bell pepper, chopped
  • 1 can (14 oz) diced tomatoes with juices
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Break apart as it cooks.
  2. Add the chopped onion, garlic, and bell pepper; sauté until softened (about 5 minutes).
  3. Stir in the chili powder, cumin, salt, and pepper to coat the meat and veggies evenly.
  4. Pour in the diced tomatoes (with juices), kidney beans, and black beans; mix well.
  5. Bring to a gentle boil. Reduce heat to low, cover the pot, and simmer for at least 30 minutes.
  6. Serve hot in bowls with optional toppings like shredded cheese or sour cream.
