Ingredients

  • 1 lb raw shrimp (peeled and deveined, large)
  • 1 teaspoon chili powder
  • ¼ teaspoon salt (to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • ½ cup chopped onion
  • 5 cloves garlic (minced)
  • 1 cup cooked corn kernels
  • 1 teaspoon smoked paprika
  • 1 cup half-and-half
  • 4 oz feta cheese (divided)
  • 2 small limes
  • 1 bunch fresh cilantro

Instructions

  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Sprinkle in the chili powder, salt, and smoked paprika, stirring to combine.
  4. Add the shrimp and cook until they turn pink.
  5. Stir in the corn and half-and-half, then reduce heat to low.
  6. Add the feta cheese and let it melt into the sauce.
  7. Serve garnished with lime juice and fresh cilantro.

Notes

  • For a spicier kick, increase the amount of chili powder.
  • Fresh lime juice adds a bright flavor to the dish.
