- 1 lb raw shrimp (peeled and deveined, large)
- 1 teaspoon chili powder
- ¼ teaspoon salt (to taste)
- 2 tablespoons olive oil
- 2 tablespoons salted butter
- ½ cup chopped onion
- 5 cloves garlic (minced)
- 1 cup cooked corn kernels
- 1 teaspoon smoked paprika
- 1 cup half-and-half
- 4 oz feta cheese (divided)
- 2 small limes
- 1 bunch fresh cilantro
Instructions
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Sprinkle in the chili powder, salt, and smoked paprika, stirring to combine.
- Add the shrimp and cook until they turn pink.
- Stir in the corn and half-and-half, then reduce heat to low.
- Add the feta cheese and let it melt into the sauce.
- Serve garnished with lime juice and fresh cilantro.
Notes
- For a spicier kick, increase the amount of chili powder.
- Fresh lime juice adds a bright flavor to the dish.
