Description

This smoked sausage and rice dish is a hearty and flavorful meal that is easy to prepare.


Ingredients

Scale
  • 2 Tablespoon olive oil
  • 12 oz smoked sausage
  • 1 cup onion (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cup uncooked long grain white rice
  • 2 1/2 cup chicken broth
  • 10 oz Rotel tomatoes
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste

Instructions

  1. Heat a large skillet over medium high heat. Add oil swirling to coat.
  2. Add sausage and diced onions to the pan. Cook for 5-7 minutes until the onions are soft and the sausage is starting to brown.
  3. Mix in garlic and let cook for 1 minute until fragrant.
  4. Mix in rice, chicken broth, tomatoes, paprika and cayenne pepper. Bring to a boil, cover and reduce heat to simmer.
  5. Cook for about 20 minutes or until liquid is absorbed and rice is fully cooked.
  6. Season with salt and pepper to taste before serving.

Notes

  • This dish can be easily customized by adding other vegetables or spices as desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
