Ingredients

  • 1/2 cup boiling water
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, separated
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 egg yolks, beaten
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 1/3 cups sweetened flaked coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Melt Chocolate: In a small bowl, pour boiling water over the German sweet chocolate and stir until melted. Set aside to cool.
  3. Mix Wet Ingredients: In a large bowl, cream together the butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in the melted chocolate and vanilla extract.
  4. Mix Dry Ingredients: Sift together the flour, baking soda, and salt. Add to the creamed mixture alternately with buttermilk, beginning and ending with flour.
  5. Beat Egg Whites: In a clean bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
  6. Bake: Divide the batter evenly between the three prepared pans. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool for ten minutes in the pan, then remove from pans to wire racks to cool completely.
  7. Make Frosting: In a saucepan over medium heat, stir together the evaporated milk, sugar, egg yolks, butter, and vanilla. Cook, stirring constantly, until thickened. Remove from heat and stir in the coconut and pecans. Cool until thick enough to spread.
  8. Assemble Cake: Spread the frosting between layers and on top of the cake.
