Description

This Teriyaki Chicken is a quick and flavorful dish that’s perfect for a weeknight dinner!


Ingredients

  • 1 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season the chicken: In a bowl, toss the chicken pieces with olive oil, salt, and pepper.
  2. Sear the chicken (optional but recommended): Turn on the pressure cooker to the sauté function. Once hot, add the chicken in a single layer and sear for 2-3 minutes per side until browned. Remove the chicken and set aside.
  3. Make the teriyaki sauce: In a separate bowl, whisk together the soy sauce, water, brown sugar, honey, cornstarch, ground ginger, minced garlic, and red pepper flakes (if using).
  4. Combine: Pour the teriyaki sauce into the pressure cooker. Add the seared chicken back into the pressure cooker, ensuring the chicken is mostly submerged in the sauce.
  5. Pressure cook: Secure the lid on the pressure cooker and set it to cook on high pressure for 8 minutes. After the cooking time is up, allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
  6. Thicken the sauce: Remove the chicken from the pressure cooker and set aside. Turn the pressure cooker back on to the sauté function and let the sauce simmer for 5-10 minutes, or until it thickens to your desired consistency.
  7. Serve: Return the chicken to the pressure cooker and toss to coat in the thickened teriyaki sauce. Serve hot over rice, garnished with sesame seeds and sliced green onions, if desired.
