- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mixed berries (blueberries and raspberries recommended)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Mix well until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of a greased 9×9-inch baking pan to form the crust.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with 1/2 cup sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.
- Assemble the Bars: Pour the cheesecake filling over the prepared crust, spreading it evenly. Scatter the mixed berries on top of the cheesecake layer.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the center is set. Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before cutting.
- Serve: Cut into bars and serve chilled.
Notes
- For a firmer crust, let the crust chill in the refrigerator for 15 minutes before adding the filling.
- You can use frozen berries if fresh ones aren’t available, but make sure to thaw and drain them well.
- Feel free to add a bit of lemon zest to the cheesecake filling for an extra burst of flavor.
- If the top starts to brown too quickly while baking, cover it loosely with foil.
