Description
Delicious mini cookie cups filled with marshmallows and chocolate, perfect for any s’mores lover!
Ingredients
Scale
- 1 cup graham cracker crumbs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 12 large marshmallows, cut in half
- 2 chocolate bars, broken into pieces
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Dough: In a medium bowl, combine graham cracker crumbs, flour, and baking powder. Stir in melted butter, sugar, vanilla extract, and egg until well mixed.
- Shape Cookie Cups: Grease a mini muffin pan. Scoop approximately one tablespoon of dough into each muffin cup. Use your fingers or a small spoon to press the dough down and shape it into a cup.
- Bake Cups: Place the muffin pan in the oven and bake for 6-8 minutes until the edges are golden brown.
- Add Marshmallows: Remove from the oven and place a marshmallow half, cut side down, into each cookie cup.
- Broil Marshmallows: Turn on the oven broiler and broil for 1-2 minutes until marshmallows are puffy and slightly golden. Watch carefully to avoid burning.
- Add Chocolate: Immediately place a piece of chocolate on top of each marshmallow, gently pressing it down.
- Cool: Allow the cookie cups to cool in the pan for about 10 minutes. Remove them from the pan and let them cool completely on a wire rack.
Notes
- Graham Cracker Crumbs: If you prefer a finer texture, pulse the graham crackers in a food processor before using them.
- Chocolate Selection: Choose your favorite chocolate, such as milk, dark, or even flavored chocolate bars.
- Storage: Store the cookie cups in an airtight container at room temperature for up to 3 days.
- Marshmallow Substitution: You can use mini marshmallows if you don’t have large ones; just place a few on each cup before broiling.
