Description

Delicious mini cookie cups filled with marshmallows and chocolate, perfect for any s’mores lover!

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 12 large marshmallows, cut in half
  • 2 chocolate bars, broken into pieces

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Dough: In a medium bowl, combine graham cracker crumbs, flour, and baking powder. Stir in melted butter, sugar, vanilla extract, and egg until well mixed.
  3. Shape Cookie Cups: Grease a mini muffin pan. Scoop approximately one tablespoon of dough into each muffin cup. Use your fingers or a small spoon to press the dough down and shape it into a cup.
  4. Bake Cups: Place the muffin pan in the oven and bake for 6-8 minutes until the edges are golden brown.
  5. Add Marshmallows: Remove from the oven and place a marshmallow half, cut side down, into each cookie cup.
  6. Broil Marshmallows: Turn on the oven broiler and broil for 1-2 minutes until marshmallows are puffy and slightly golden. Watch carefully to avoid burning.
  7. Add Chocolate: Immediately place a piece of chocolate on top of each marshmallow, gently pressing it down.
  8. Cool: Allow the cookie cups to cool in the pan for about 10 minutes. Remove them from the pan and let them cool completely on a wire rack.

Notes

  • Graham Cracker Crumbs: If you prefer a finer texture, pulse the graham crackers in a food processor before using them.
  • Chocolate Selection: Choose your favorite chocolate, such as milk, dark, or even flavored chocolate bars.
  • Storage: Store the cookie cups in an airtight container at room temperature for up to 3 days.
  • Marshmallow Substitution: You can use mini marshmallows if you don’t have large ones; just place a few on each cup before broiling.
