Description

A rich and decadent dessert combining brownies with a cheesecake layer and blackberry puree.

Ingredients

Scale
  • 1 cup fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 3/4 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh blackberries and crumble topping for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Prepare Blackberry Puree: In a small saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat until the mixture thickens. Set aside to cool.
  3. Make Brownie Base: In a bowl, mix melted butter, flour, cocoa powder, baking powder, and salt until well combined. Pour the mixture into the prepared baking pan, spreading it evenly.
  4. Prepare Cheesecake Layer: In another bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and vanilla extract, mixing until creamy. Gently fold in the cooled blackberry puree.
  5. Assemble the Brownies: Spread the cheesecake mixture over the brownie layer in the pan, smoothing the top with a spatula.
  6. Bake: Bake for 25-30 minutes or until the edges are set. The center should be slightly wobbly. Remove from oven and let cool completely in the pan. Refrigerate for at least 2 hours before slicing.
  7. Garnish and Serve: Garnish with fresh blackberries and crumble topping if desired. Cut into squares and serve chilled.

Notes

  • Ensure the cream cheese is at room temperature for a smooth cheesecake layer.
  • For a richer flavor, consider using dark chocolate cocoa powder.
  • Adjust the sugar in the blackberry puree according to the sweetness of the berries.
