Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Prepare Blackberry Puree: In a small saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat until the mixture thickens. Set aside to cool.
- Make Brownie Base: In a bowl, mix melted butter, flour, cocoa powder, baking powder, and salt until well combined. Pour the mixture into the prepared baking pan, spreading it evenly.
- Prepare Cheesecake Layer: In another bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and vanilla extract, mixing until creamy. Gently fold in the cooled blackberry puree.
- Assemble the Brownies: Spread the cheesecake mixture over the brownie layer in the pan, smoothing the top with a spatula.
- Bake: Bake for 25-30 minutes or until the edges are set. The center should be slightly wobbly. Remove from oven and let cool completely in the pan. Refrigerate for at least 2 hours before slicing.
- Garnish and Serve: Garnish with fresh blackberries and crumble topping if desired. Cut into squares and serve chilled.
