Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups fresh mushrooms (cremini or button), chopped
- 1 cup coarsely chopped walnuts
- 1/2 cup low-sodium vegetable broth
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a loaf pan.
- Sauté mushrooms in olive oil over medium heat until golden brown (5-7 minutes).
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, combine vegetable broth, olive oil, sautéed mushrooms, and walnuts.
- Pour the wet mixture into the dry ingredients and gently fold until just combined.
- Transfer to the loaf pan and bake for 45-50 minutes or until golden brown.
Notes
- Allow the loaf to cool slightly before slicing for better texture.
- This loaf can be served warm or at room temperature.
