Ingredients

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups fresh mushrooms (cremini or button), chopped
  • 1 cup coarsely chopped walnuts
  • 1/2 cup low-sodium vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
  2. Sauté mushrooms in olive oil over medium heat until golden brown (5-7 minutes).
  3. In a bowl, mix flour, baking powder, and salt.
  4. In another bowl, combine vegetable broth, olive oil, sautéed mushrooms, and walnuts.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
