- 1 lb carrots, peeled and chopped
- 1 lb beets, scrubbed and chopped
- 1/4 cup honey
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine honey, olive oil, salt, pepper, and thyme if using.
- Add carrots and beets; toss to coat evenly.
- Spread on a parchment-lined baking sheet in a single layer.
- Roast for 30-35 minutes until tender, stirring halfway through.
- Serve warm, drizzling any leftover honey mixture on top.
