Description

This delicious Crunch Layer Cake features a moist cake base topped with a crunchy layer and creamy frosting.


Ingredients

  • 200 g (1 cup) all-purpose flour
  • 200 g (1 cup) granulated sugar
  • 200 g (½ cup) unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 150 g (1 ½ cups) Rice Krispies cereal
  • 100 g (½ cup) white chocolate, melted
  • 50 g (¼ cup) chopped nuts (optional)
  • 250 g (1 cup) cream cheese, softened
  • 100 g (½ cup) unsalted butter, softened
  • 200 g (1 ½ cups) powdered sugar
  • 1 teaspoon vanilla extract
  • red and green sprinkles for decoration (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line a 9-inch cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually fold dry ingredients into wet ingredients until combined.
  6. Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean. Allow to cool completely.
  7. Prepare the crunch layer: Mix Rice Krispies, melted white chocolate, and nuts (if using). Spread evenly over the cooled cake and refrigerate for 15 minutes to set.
  8. Prepare the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until fluffy.
  9. Spread frosting over the crunch layer and decorate with festive sprinkles.
  10. Chill for at least 30 minutes before serving.

  • Make sure to allow the cake to cool completely before adding the crunch layer.
