Description

Delicious cookies that combine the warmth of hot chocolate with gooey marshmallows, perfect for any occasion.


Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup hot chocolate mix (powder)
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, shortening, and sugar until light and fluffy, about 2–3 minutes using an electric mixer.
  3. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and hot chocolate mix until evenly combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. Gently fold in the mini marshmallows using a spatula.
  6. Drop spoonfuls of dough (about 2 tablespoons each) onto a non-greased baking sheet, leaving space between each cookie for spreading. If the dough feels too soft, chill it for 15–30 minutes for best results.
  7. Bake for 10–12 minutes, until the edges are set and the centers still look slightly soft. The marshmallows should be melted and gooey.
  8. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, you can add chocolate chips to the dough.
