Description

These healthy oatmeal cookies are perfect for a snack or breakfast. Made with wholesome ingredients, they’re delicious and nutritious!


Ingredients

Scale
  • 1 medium carrot, peeled and chopped into big chunks
  • 3 Medjool dates, pitted
  • 1 medium ripe banana
  • 1 cup old fashioned oats
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon freshly grated nutmeg
  • 2 pinches salt

Instructions

  1. Preheat oven to 360° F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Add carrots and dates into a food processor, process for few seconds until finely chopped.
  3. Add all group-2 ingredients and pulse about 5 times, until combined. Do not grind too much. Remove the blade and stir mixture well to evenly combine.
  4. Using an ice cream scoop, scoop about 3 tablespoons measure balls and place on the prepared baking sheet, spacing evenly apart.
  5. Using a flat spoon, gently pat each dough ball into 1/2-inch thick discs.
  6. Bake for 25 to 30 minutes, until deep golden around the edges. Place pan on a wire rack to cool completely.
