- 2 overripe bananas
- 1/2 cup dairy or non-dairy milk
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups old-fashioned oats (not quick or instant, certified gluten free, if needed)
- 1 Tablespoon ground flaxseed
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Add 2 overripe bananas, 1/2 cup dairy or non-dairy milk, 1 large egg, 2 teaspoons vanilla extract, 2 cups old-fashioned oats, 1 Tablespoon ground flaxseed, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt to your blender, then gradually increase the speed and blend until smooth. You may have to scrape down the sides to incorporate everything.
- Preheat your waffle iron and cook the waffles according to the directions for the waffle iron. You’ll need about 1/3 to 1/2 cup of batter per waffle.
- Enjoy immediately or keep warm in a low oven. You can also wrap them tightly and refrigerate for several days or freeze for up to two months.
