Description

A delicious and comforting casserole combining orzo, chicken, and caramelized onions, topped with melted cheese.


Ingredients

  • 2 cups cooked orzo pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 large onions, thinly sliced
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheese (Swiss or Gruyère recommended)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon thyme (fresh or dried)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, until the onions are soft and golden brown (about 15-20 minutes).
  3. In the same skillet, add the chicken pieces, garlic powder, thyme, salt, and pepper, and cook until the chicken is no longer pink (about 5-7 minutes).
  4. In a large mixing bowl, combine the caramelized onions, cooked chicken, orzo, and chicken broth. Mix well until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish. Top with shredded cheese, cover with foil, and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  7. Let it cool slightly before serving.
