- 2 cups cooked orzo pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 large onions, thinly sliced
- 4 cups low-sodium chicken broth
- 1 cup shredded cheese (Swiss or Gruyère recommended)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon thyme (fresh or dried)
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, until the onions are soft and golden brown (about 15-20 minutes).
- In the same skillet, add the chicken pieces, garlic powder, thyme, salt, and pepper, and cook until the chicken is no longer pink (about 5-7 minutes).
- In a large mixing bowl, combine the caramelized onions, cooked chicken, orzo, and chicken broth. Mix well until everything is evenly coated.
- Transfer the mixture to the prepared baking dish. Top with shredded cheese, cover with foil, and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Let it cool slightly before serving.
