Description

A delicious brunch recipe featuring baked puff pastry filled with eggs and cheese.


Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 4 large eggs
  • 1/2 cup ricotta cheese
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup shredded Gruyère or mozzarella
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Everything bagel seasoning (optional)
  • Fresh chives for garnish

Instructions

  1. Cut the puff pastry into 4 squares, score a smaller square inside each, and lightly prick the centers.
  2. Mix ricotta, spinach, olive oil, and cheese, then spread a spoonful inside each scored center.
  3. Bake at 400°F for 8–10 minutes until slightly puffed.
  4. Carefully crack an egg into each pastry center. Season with salt, pepper, and everything bagel seasoning.
  5. Return to the oven for 8–12 minutes, depending on how runny you like your yolk. Garnish with chives.
