Ingredients

  • 1 cup granulated sugar
  • 6 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

  • Red and green gel food coloring
  • 1/2 cup butter, softened
  • 1 1/2 cups powdered sugar
  • Holiday-themed sprinkles and edible decorations

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C).
    • Line a 15×10-inch jelly roll pan with parchment paper and grease it lightly.
    • In a bowl, beat the eggs and granulated sugar together until thick and pale. Mix in vanilla extract.
    • Sift in flour and cocoa powder, folding gently until combined.
    • Divide the batter into three parts. Color one part red, another green, and leave one plain.
    • Spread the batters evenly on the prepared pan in layers or swirls as desired.
    • Bake for 10-12 minutes, or until the cake springs back when touched.
    • Immediately turn the cake onto a clean kitchen towel sprinkled with powdered sugar. Peel off the parchment.
    • Roll up the cake with the towel from the short side and let it cool completely with seam side down.
  2. Prepare the Filling:
    • Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. Assemble the Cake:
    • Unroll the cooled cake carefully. Spread the whipped cream mixture evenly over it.
    • Roll the cake back up (without the towel) and place it seam-side down on a serving plate.
  4. Decorate:
    • Color the buttercream with red and green food coloring. Pipe the buttercream decoratively over the cake to resemble a tree log.
    • Add holiday-themed sprinkles and edible decorations as desired.

Notes

  • Be cautious with the food coloring; a little goes a long way.
  • If the cake cracks while rolling, use additional buttercream to help it hold shape.
