Description

Enjoy the festive cheer with every slice of this delicious Funfetti Loaf!

Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • ½ cup red and green sprinkles or funfetti
  • ½ cup powdered sugar (for glaze)
  • 23 teaspoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.

  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

  3. Beat in the eggs one at a time, then stir in the vanilla extract.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.

  6. Gently fold in the red and green sprinkles until evenly distributed.

  7. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

  9. In a small bowl, mix powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the cooled loaf.

Notes

  • Make sure the butter is at room temperature for easier creaming.
  • Fold the sprinkles in gently to prevent color bleeding.
  • Adjust the glaze’s thickness by adding more milk if too thick or more powdered sugar if too runny.
  • Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week.
