Description
Enjoy the festive cheer with every slice of this delicious Funfetti Loaf!
Ingredients
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup milk
- ½ cup red and green sprinkles or funfetti
- ½ cup powdered sugar (for glaze)
- 2–3 teaspoons milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
-
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
-
Beat in the eggs one at a time, then stir in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking powder, and salt.
-
Gradually add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.
-
Gently fold in the red and green sprinkles until evenly distributed.
-
Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
-
Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
-
In a small bowl, mix powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the cooled loaf.
Notes
- Make sure the butter is at room temperature for easier creaming.
- Fold the sprinkles in gently to prevent color bleeding.
- Adjust the glaze’s thickness by adding more milk if too thick or more powdered sugar if too runny.
- Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week.
