Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- Crush the chocolate sandwich cookies into fine crumbs using a food processor.
- Mix the crumbs with melted butter until well combined.
- Press the mixture into a 9-inch pie dish to form an even crust.
- Bake for 8-10 minutes, then let cool completely.
- Make the Peanut Butter Filling:
- In a large mixing bowl, beat together the peanut butter, confectioners’ sugar, cream cheese, and vanilla extract until smooth.
- Gently fold in the whipped cream until fully incorporated.
- Spread the peanut butter filling evenly over the cooled crust.
- Prepare the Chocolate Ganache:
- Place chopped chocolate in a heat-proof bowl.
- Heat the cream in a saucepan over medium heat until it begins to simmer.
- Pour the hot cream over the chocolate and let it sit for a minute, then stir until smooth.
- Let the ganache cool slightly, then spread over the peanut butter layer.
- Assemble the Pie:
- Add a layer of whipped cream over the chocolate ganache.
- Garnish with chocolate shavings, mini chocolate cookies, or peanut butter chips.
