- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup strawberry or raspberry jam
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup graham cracker crumbs
- Vegetable oil, for frying
Instructions
- Prepare the Filling: In a mixing bowl, combine the cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
- Assemble the Bites: Take a small spoonful of the cream cheese mixture and flatten it in your hand. Add a small dollop of jam in the center and carefully close the cream cheese around it, forming a ball. Repeat until all the mixture is used.
- Coat the Bites: Roll each cheesecake ball in flour, then dip in beaten eggs, and finally coat with graham cracker crumbs.
- Fry the Bites: Heat vegetable oil in a deep pan over medium heat. Carefully place the coated cheesecake bites into the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove from oil and drain on paper towels.

- Ensure the cream cheese is well-chilled before assembling to make handling easier.
- Test oil temperature with a small piece of bread; if it sizzles and browns, the oil is ready.
- For extra flavor, try adding a pinch of cinnamon to the graham cracker crumbs.
