Instructions

  1. Prepare the Filling:
    • In a saucepan, combine the orange juice, orange zest, and sugar over medium heat.
    • In a small bowl, mix cornstarch with a bit of water to make a slurry. Add this to the saucepan.
    • Stir continuously until the mixture thickens and starts to bubble.
  2. Incorporate Cream and Eggs:
    • In a separate bowl, whisk together the egg yolks and heavy cream.
    • Gradually add a small amount of the hot orange mixture to the egg mixture to temper it, then return everything to the saucepan.
    • Stir constantly over low heat until the mixture thickens and coats the back of a spoon. Do not boil.
    • Remove from heat and stir in the butter until fully melted.
  3. Assemble the Tart:
    • Pour the orange custard into the pre-baked tart shell. Smooth the top with a spatula.
    • Allow cooling at room temperature for 15 minutes, then refrigerate for at least 2 hours until set.
  4. Decorate:
    • Once set, top the tart with whipped cream.
    • Sprinkle brown sugar over the whipped cream.
    • Arrange orange slices around the edge for an appealing presentation.
    • Optionally, add mint leaves for garnish.
