- 1 pound large shrimp (peeled and deveined)
- 3 tablespoons unsalted butter
- 4 cloves fresh garlic (minced)
- 1 cup heavy cream
- 1 cup long-grain white rice
- 2 tablespoons fresh parsley (chopped)
- Juice of 1 lemon
- Salt & pepper to taste
Instructions
- Prepare the rice by rinsing it under cold water until clear.
- Boil 2 cups of water in a pot, add the rice and a pinch of salt, then cover and simmer for about 18 minutes.
- In a large skillet over medium heat, melt the butter until bubbly.
- Sauté the minced garlic for about 1 minute until fragrant.
- Add the shrimp to the skillet; season with salt and pepper and cook for 3-4 minutes per side until pink and opaque.
- Reduce heat to low, pour in the heavy cream and lemon juice, stirring gently until combined.
- Fluff the cooked rice with a fork and add it to the skillet, mixing well until coated in the creamy sauce.
