Description
A delicious and crunchy coleslaw salad with ramen noodles and a tasty dressing.
Ingredients

- 14 ounces coleslaw mix
- 1 package chicken flavored Ramen (set aside seasoning packet for dressing)
- 2 cups cooked chicken, coarsely chopped
- 15 ounces mandarin oranges, drained very well
- ½ cup sliced almonds
- 2 tablespoons white sesame seeds
- 2–3 green onions, sliced (optional, for garnish)
- ⅓ cup olive oil
- 3 tablespoons Rice Vinegar
- 1 packet Ramen chicken seasoning packet
- ½ teaspoon sesame oil
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Add 14 ounce package coleslaw mix to a large bowl.
- Break 1 package chicken flavored Ramen noodles into bite-size pieces and add it to the bowl.
- Add in 2 cups cooked chicken, coarsely chopped, 15 ounce can mandarin oranges, drained very well, ½ cup sliced almonds and 2 tablespoons white sesame seeds. Toss to combine.
- To a small bowl add ⅓ cup olive oil, 3 tablespoons Rice Vinegar, 1 packet Ramen chicken seasoning packet, ½ teaspoon sesame oil, 1 teaspoon salt and ½ teaspoon pepper. Stir to combine.
- Pour the dressing over the salad and toss to fully coat.
- Garnish with 2-3 green onions, sliced and serve immediately.
Notes
- Using a variety of mixed greens is also an option for added texture.
- You can prepare the salad ahead of time but add the dressing right before serving for best results.
