Coleslaw Ramen Salad

Description

A delicious and crunchy coleslaw salad with ramen noodles and a tasty dressing.


Ingredients

Scale
  • 14 ounces coleslaw mix
  • 1 package chicken flavored Ramen (set aside seasoning packet for dressing)
  • 2 cups cooked chicken, coarsely chopped
  • 15 ounces mandarin oranges, drained very well
  • ½ cup sliced almonds
  • 2 tablespoons white sesame seeds
  • 23 green onions, sliced (optional, for garnish)
  • ⅓ cup olive oil
  • 3 tablespoons Rice Vinegar
  • 1 packet Ramen chicken seasoning packet
  • ½ teaspoon sesame oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Add 14 ounce package coleslaw mix to a large bowl.
  2. Break 1 package chicken flavored Ramen noodles into bite-size pieces and add it to the bowl.
  3. Add in 2 cups cooked chicken, coarsely chopped, 15 ounce can mandarin oranges, drained very well, ½ cup sliced almonds and 2 tablespoons white sesame seeds. Toss to combine.
  4. To a small bowl add ⅓ cup olive oil, 3 tablespoons Rice Vinegar, 1 packet Ramen chicken seasoning packet, ½ teaspoon sesame oil, 1 teaspoon salt and ½ teaspoon pepper. Stir to combine.
  5. Pour the dressing over the salad and toss to fully coat.
  6. Garnish with 2-3 green onions, sliced and serve immediately.

Notes

  • Using a variety of mixed greens is also an option for added texture.
  • You can prepare the salad ahead of time but add the dressing right before serving for best results.
