Description
A delicious cherry chocolate roll cake filled with whipped cream and cherry preserves.

- 4 large eggs
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/2 cup cherry preserves
- 1/2 cup dark chocolate shavings
- Fresh cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 10×15 inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar together until thick and pale.
- Sift in the flour, cocoa powder, baking powder, and salt. Fold gently to combine.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 10-12 minutes, or until the cake springs back when touched.
- While the cake is baking, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cake is baked, remove from the oven and immediately roll the cake in a clean kitchen towel dusted with powdered sugar.
- Let it cool completely.
- Once cooled, spread with cherry preserves, followed by the whipped cream.
- Re-roll the cake without the towel and transfer to a serving platter.
- Cover with remaining whipped cream, and garnish with dark chocolate shavings and fresh cherries.
