Description

A delicious pasta dish featuring a fresh tomato basil sauce.


Ingredients

Scale
  • 1/4 cup extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 28 oz can of crushed tomatoes (preferably San Marzano)
  • 1 tsp dried oregano
  • Pinch of red pepper flakes (optional)
  • 56 fresh basil leaves, torn
  • Salt and freshly ground black pepper, to taste
  • 1 tsp sugar (optional, to balance acidity)
  • 1 lb pasta of choice (such as spaghetti, rigatoni, or penne)
  • Freshly grated Parmigiano-Reggiano cheese

Instructions

  1. Heat the olive oil in a large skillet or saucepan over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the crushed tomatoes, then add the oregano, red pepper flakes (if using), and torn basil leaves. Season with salt and pepper.
  5. Bring the sauce to a simmer, then reduce the heat to low. Let it cook, uncovered, for 15-20 minutes, stirring occasionally. If the sauce tastes too acidic, stir in a teaspoon of sugar.
  6. Taste and adjust seasoning as needed.
  7. While the sauce simmers, bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente.
  8. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta.
  9. Add the drained pasta directly to the skillet with the sauce. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
  10. Serve immediately, topped with plenty of freshly grated Parmigiano-Reggiano cheese.

Notes

  • The sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to adjust the seasoning and spice levels according to your taste.
