Ingredients

  • 1 lb lean ground beef
  • 2 cups elbow macaroni
  • 1 medium onion, finely chopped
  • 1 cup bell peppers, chopped (any color)
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tsp Italian seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente; drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef while breaking it apart.
  3. Add chopped onions and bell peppers; sauté until soft.
  4. Stir in minced garlic and cook for 30 seconds.
  5. Add diced tomatoes and tomato sauce; mix well.
  6. Season with Italian seasoning, salt, and pepper, then cover briefly to melt.
