Description
Delicious air fryer roasted vegetables, perfect as a side or salad addition.
Ingredients

- 8 oz cherry tomatoes (halved)
- 2 cup zucchini (chopped)
- 1 cup red onion (sliced)
- 3 tbsp minced garlic
- 2 small bell peppers (color of your choice, seeds removed, cubed)
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 pinch salt and pepper
- 1/2 cup olives (halved)
- 2 tbsp parsley (fresh, chopped)
- 3 tbsp olive oil
- 1/4 large lemon (fresh, squeezed)
- 1 pinch salt (to taste)
Instructions
- Preheat air fryer to 400 degrees F for 5 minutes.
- In a large mixing bowl, add halved cherry tomatoes, zucchini, onions, garlic, bell peppers, 2 tbsp oil, Italian herbs, salt and pepper. Mix all together.
- Transfer to the air fryer basket and air fry for 10-12 minutes, shaking the basket every 4 minutes.
- Remove roasted vegetables and add to a large salad bowl.
- Whisk together dressing (using remaining oil and lemon) and pour on top. Toss together and serve.
- You could cook penne pasta separately and fold that in. If you add noodles, double the amount of dressing so everything is coated well.
Notes
- Feel free to use any vegetables you have on hand.
- Toss in your favorite protein for a complete meal.
