- 500g carrots, peeled and sliced
- 500g parsnips, peeled and sliced
- 300g Brussels sprouts, trimmed and halved
- 200g red onions, quartered
- 4 tbsp olive oil
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp honey (optional)
Instructions
- Preheat your oven to 200°C (180°C fan).
- In a large bowl, toss the carrots, parsnips, Brussels sprouts, and red onions with olive oil, thyme, salt, and pepper.
- Spread the vegetables evenly on a baking tray.
- Roast for 30-35 minutes, stirring halfway, until tender and golden.
- Drizzle with honey before serving for extra sweetness.
