Description

A delicious blend of roasted carrots, parsnips, Brussels sprouts, and red onions, seasoned to perfection.


Ingredients

  • 500g carrots, peeled and sliced
  • 500g parsnips, peeled and sliced
  • 300g Brussels sprouts, trimmed and halved
  • 200g red onions, quartered
  • 4 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp honey (optional)

Instructions

  1. Preheat your oven to 200°C (180°C fan).
  2. In a large bowl, toss the carrots, parsnips, Brussels sprouts, and red onions with olive oil, thyme, salt, and pepper.
  3. Spread the vegetables evenly on a baking tray.
  4. Roast for 30-35 minutes, stirring halfway, until tender and golden.
  5. Drizzle with honey before serving for extra sweetness.
