Description

Ingredients

  • 1/2 cup raspberry jam
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon lemon zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cookie Dough: In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Cheesecake Filling: In a small bowl, beat the cream cheese, powdered sugar, and lemon zest until smooth.
  4. Assemble Cookies: Scoop tablespoon-sized portions of cookie dough and place them on the prepared baking sheets. Make a small indentation in the center of each ball. Fill the indentation with a small spoonful of raspberry jam and a dollop of the cream cheese mixture.
  5. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  6. Finish: Dust the cooled cookies with powdered sugar before serving.
