- 2 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to over-mix!
- Gently stir in the mini chocolate chips and mini marshmallows, ensuring they’re evenly distributed throughout the dough.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft.
- Remove the cookies from the oven and let them cool on the sheets for about 5 minutes before transferring them to wire racks to cool completely.
Notes
- Store cookies in an airtight container for up to one week.
- For extra flavor, consider adding a pinch of sea salt on top before baking.
