Description
Deliciously festive cookies with a peppermint twist, perfect for the holiday season.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 package peppermint-flavored chocolate kisses (unwrapped)
- Red and green sanding sugar for rolling
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
- Mix Dry Ingredients: In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Form Cookies: Divide the dough into two sections. Roll each section into balls, about 1 inch in size.
- Color and Coat: Roll half of the dough balls in red sanding sugar and the other half in green sanding sugar until fully coated.
- Bake: Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 8-10 minutes, or until the edges are set but not browned.
- Add Peppermint Chocolate: Immediately after removing the cookies from the oven, gently press a peppermint chocolate kiss into the center of each cookie.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- If the dough is sticky, refrigerate it for 30 minutes before rolling.
- Ensure chocolate kisses are unwrapped and ready to go before cookies come out of the oven.
- Use a high-quality peppermint chocolate for the best flavor.
- Store cookies in an airtight container to keep them fresh for up to a week.
