- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda

- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 4 oz cream cheese, softened
- 1/4 cup sugar for filling
- 1 teaspoon vanilla extract for filling
Instructions
- Prepare the Filling: In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Scoop 1-teaspoon-sized portions onto a parchment-lined tray and freeze until solid, about 45 minutes.
- Make the Cookie Dough: In a large bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat together butter and sugar until fluffy. Add the egg, milk, vanilla extract, and red food coloring, mixing until combined. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Assemble the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the cookie dough. Flatten each into a disk and place a frozen cream cheese filling in the center. Wrap the dough around the filling, sealing the edges to form a ball. Place on the prepared baking sheet, spaced about 2 inches apart.
- Bake: Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure the cream cheese is very cold when placing it in the cookie dough to prevent it from melting too quickly.
- Adjust the red food coloring to achieve your desired intensity of red.
- Store cookies in an airtight container to keep them fresh for up to a week.
