Description

A rich and creamy cheesecake layered with mixed berries and topped with chocolate truffles and caramel sauce.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips, melted
  • 1 cup mixed berries (raspberries, strawberries)
  • 1 cup chocolate truffles or chocolate balls
  • 2 tbsp caramel sauce
  • 1 tbsp cocoa powder (optional for dusting)
  • Sprigs of mint (optional for garnish)

Instructions

  1. Prepare the Crumb Base: In a bowl, mix graham cracker crumbs with melted butter until evenly coated.
  2. Form the Crust: Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator for at least 20 minutes.
  3. Mix the Cream Cheese: In a large bowl, beat softened cream cheese, sugar, and vanilla extract until smooth.
  4. Whip the Cream: In another bowl, whip heavy cream until stiff peaks form.
  5. Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture.
  6. Add Chocolate: Drizzle in the melted chocolate, stirring slowly to create a marbled effect.
  7. Layer the Cheesecake: Remove the crust from the refrigerator. Pour half of the cheesecake mixture over the crust.
  8. Add Berries: Sprinkle a handful of mixed berries over the first layer.
  9. Top Layer: Pour the remaining cheesecake mixture over the berry layer. Smooth the top with a spatula.
  10. Decorate: Arrange the chocolate truffles and remaining mixed berries on top. Drizzle with caramel sauce and optionally dust with cocoa powder.

Notes

  • For a firmer crust, bake the base at 350°F (175°C) for 10 minutes before chilling.
  • Ensure cream cheese is at room temperature for easier mixing.
  • Allow the cheesecake to chill overnight for the best texture and flavor enhancement.
  • For a more intense chocolate flavor, consider adding a layer of chocolate ganache under the toppings.
