Instructions

  1. Prepare the Cake Roll: Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat eggs and sugar until thick. Add strawberry puree, vanilla, and a few drops of red food coloring. Mix well. Gradually fold in the dry ingredients. Spread the batter evenly in the prepared pan. Bake for 10-12 minutes until the cake springs back when touched. Turn the cake onto a sugared towel. Gently peel off the parchment and roll the cake in the towel. Let it cool completely.
  2. Prepare the Filling: In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  3. Assemble the Cake: Unroll the cooled cake and spread the whipped cream filling evenly. Carefully re-roll the cake. Slice the roll into pieces and arrange them vertically around the sides of a round cake pan.
  4. Chocolate-Covered Strawberries: Melt chocolate chips in a double boiler or microwave. Dip strawberries halfway into the melted chocolate and place them on a parchment-lined tray to set.
  5. Final Assembly: Fill the center of the cake with remaining whipped cream and top with chocolate-covered strawberries. Chill the assembled cake for at least an hour before serving.
