Description

Delicious chocolate cookie cups infused with peppermint and topped with festive decorations.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peppermint-flavored chocolate chips (or chopped peppermint chocolates)
  • Mini candy canes (for decoration)
  • Mini marshmallows
  • Chocolate frosting or ganache

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin pan.
  2. Mix Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Form the Dough: Gradually add the dry ingredients to the wet ingredients, mixing well. Fold in the peppermint-flavored chocolate chips or chopped chocolates.
  5. Shape and Bake: Roll the dough into small balls and place them in the prepared mini muffin pan, pressing down lightly to create a cup shape. Bake for 10-12 minutes, or until the edges are golden.
  6. Cool: Allow the cookie cups to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
  7. Decorate: Once completely cool, fill each cookie cup with chocolate frosting or ganache. Top with mini marshmallows and add a mini candy cane for decoration.

Notes

  • Make Ahead: You can prepare the dough in advance and chill it in the refrigerator for up to 24 hours before baking.
  • Frosting Alternative: If you prefer homemade frosting, melt some chocolate chips with a bit of heavy cream to make a quick ganache.
  • Storage: Store these cookie cups in an airtight container at room temperature for up to a week.
  • Variations: Try adding a drop of peppermint extract to the cookie dough for an extra burst of flavor.
