Description

This Cherry Fluff Salad is a delightful and creamy fruit salad with marshmallows, cherries, and mandarin oranges. It’s perfect for potlucks and gatherings!


Ingredients

Scale
  • 15 regular-sized marshmallows (not mini marshmallows)
  • 12 ounces cherry 7-Up soda
  • 8 ounces cream cheese, softened to room temperature
  • 3 ounces cherry Jell-O (smaller box)
  • 1 Tablespoon fresh lime juice (optional)
  • 16 ounces jar halved maraschino cherries, drained really well
  • 22 ounces can mandarin oranges, drained really well
  • 3 bananas, sliced (don’t slice until right before stirring in)
  • 8 ounces tub whipped topping (COOL WHIP), thawed

Instructions

  1. In a sauce pan over medium heat, combine marshmallows and cherry 7-Up. Whisk together frequently until melted. Remove from heat.
  2. In a separate large bowl, using an electric mixer, combine cream cheese, cherry gelatin mix and lime juice until smooth.
  3. Slowly stir in marshmallow/7-Up mixture to cream cheese mixture until combined well.
  4. Stir in drained maraschino cherries, drained mandarin oranges and sliced bananas (slice the bananas just before adding so they don’t turn brown).
  5. Finally stir in whipped topping.
  6. Note: Do not over stir this or the mandarin oranges will break up too much. You want to see those whole pieces of fruit in this.
  7. Cover bowl and refrigerate for at least 4 hours.
  8. Optional: garnish servings with a lime twist and a maraschino cherry.

Notes

  • This dish is best served chilled after refrigeration.
  • Be careful not to slice the bananas too early to avoid browning.
